Rainier Cherry Relish:
  1. In a medium saute pan, combine 2 tbsp oil and chopped garlic. Cook for 2 minutes, or until garlic is fragrant.
  2. Add in chopped Rainier cherries, allowing it to saute for a minute or two and then remove from heat. 
  3. Transfer cherry relish to a bowl and add in vinegar, parsley and basil. Allow it to cool for ten minutes. Add salt and pepper as needed.

Pan Seared Salmon:
  1. Preheat a skillet over medium heat for a few minutes.
  2. Add enough oil to the skillet to coat the bottom (2 tbsp).
  3. Season the skin of the fish with salt and then lay the fish down in the sizzling pan, skin side down.
  4. Cook skin side down for about 5 minutes.
  5. Salt the top of the fish before flipping it over to cook for 30 seconds more.
  6. Remove from heat and top with cherry relish.
  7. Enjoy!
