In a large bowl, mix eggs, chiles, and cheese and set to the side.

Begin cooking the potatoes over medium-high heat in a small frying pan. Then begin cooking the egg mixture in it’s own larger frying pan over medium heat.

Once both pans are nearly finished cooking, mix together in the larger frying pan.

Wrap the mixture in tortillas and serve warm.
