1. Line two baking sheets with parchment paper.
2. In a microwave-safe mixing bowl, add the dark chocolate, almond butter, coconut oil, and vanilla extract, melting the mixture in 45-second intervals until completely melted.
3. Pour the rolled oats and melted chocolate mixture into a medium bowl.
4. Combine all the ingredients and scoop medium-sized cookies onto a prepared cookie sheet. Spread them out slightly.
5. Give the cookies 30 minutes to set completely.
6. Drizzle melted chocolate over your cookies.
